Egg Replacements

If you want to go vegan than there are egg replacements.

The chia Egg:

1 Dairy egg= 2 tablespoons of water + 3/4 teaspoon of chia seed

The psyllium egg:

1 Dairy egg= 1/4 cup of water + 1/2 teaspoon psyllium husk powder

Psyllium is a plant rich in soluble fiber and when and it comes into contact with moisture, it becomes gelatinous. It gives a “stretch” to gluten free, dairy free baked goods and an egg like, springy bind to veggie cakes and burgers. I prefer psyllium powder (which is ground husks) because it dissolves evenly, but both work.

1 tablespoon of husks = 3 teaspoons of powder

To get the Sulphur-y flavor that comes with eggs, use India Black Salt, also known as Kala Namak salt (not to be confused with black lava salt). It’s a pinkish, fine salt that has a distinct sulpherous taste and odor (but not in that way). (H.Crosby,YumUniverse)
