Sauerkraut Salad

 

This has got to be the easiest recipe I ever made. If you don’t like sauerkraut you will probably still like this! It is so good, and is good for the gut!

Ingredients:

  • 1 Jar of sauerkraut
  • 2 medium – large Honey crisp apples, (washed, unpeeled, and cored. Any apple will do)
  • 5oz of baby super greens

Instructions:

Squeeze the juice out of the sauerkraut (with utensil or hands). Place in bowl. Grate apples, I put mine in a food processor grater, some were grated, some were chopped because I am still getting used to the food processor. Mix it all together and serve! It makes a great side salad! I served mine a fresh juice and a baked stuffed portabella mushroom (spinach, tomatoes, vegan cheese, yellow and red chopped sweet peppers, onion and cilantro).
