Teriyaki Tofu

I found this recipe on the internet but changed it up a bit to my liking.

Tofu Teriyaki
• 1 block of firm or extra firm tofu
• 2 cups of basmati white organic rice (measured uncooked)
• 1 tablespoon of oil
• 1 large onion
• Teriyaki sauce or make your own here
Teriyaki Sauce:
• 4 Braggs Liquid Aminos
• ¼ cup of water
• 3 tablespoons of monk fruit sugar (I use Lakanto Brand) or coconut sugar
• 2 tablespoons of maple syrup ( I use Lakanto Brand)
• ¼ teaspoon of ginger
• ¼ teaspoon of garlic
• 1 tablespoon of organic corn starch
• Another ¼ cup of water

Instructions:

1. Press the tofu and preheat oven to 400F
2. I didn’t press my tofu for long, maybe like 5 minutes. Recommendation is 1-4 hours but I was short on time. I literally put a paper towel on a plate and put the tofu on it and another paper towel over the tofu and pressed with my hand, then I replaced the paper towels with dry one and Then I put a heavy object over it for 5 mins and it worked out for me.
3. Cut the tofu into bite size pieces and place them on a parchment lined baking sheet. Bake for 15 minutes or until tofu browns and dries out a bit. I left mine in for like 25 minutes and it still have decent moisture inside.
4. While tofu is baking I caramelized my onions. I waited until after 10 minutes of baking to start the process. Place the oil (you may need more) and chopped onion in a large skillet and sauté over medium low heat. (closer to low) Stirring frequently to prevent sticking. After browning and translucency occurs remove from heat.

How to make Teriyaki Sauce:
1. In a glass measuring cup, measure out ¼ cup of water and mix in the corn starch. Set aside.
2. In a small sauce pan, add the liquid aminos, the remaining ¼ cup of water, sugar, maple syrup, ginger, and garlic. Bring to a simmer over medium heat.
3. Once the sauce is at a simmer, give the cornstarch another quick stir, then whisk it into the sauce. Bring the sauce back into a simmer continually whisk until desired thickness. If it becomes too thick add more water.
4. Taste and adjust flavors if needed. To bring down saltiness, add more water and/or sweetener. If it is too sweet add a splash more liquid aminos.

To Serve:
• Scoop rice on plate, top with caramelized onions and tofu, then drizzle teriyaki sauce. Or you can mix tofu and teriyaki together rather than drizzling.
• Add steamed asparagus on the side or favorite vegetable to complete the dish
